How would you like a healthy, tasty salad that you can easily cook within 30 minutes? This light yam and lentil salad recipe will be your favorite for a while (if not ever).
You can have this lentil salad as a healthy side, or you can make it your main course if you’re going all green!
Not only is this salad easy to make, but you’ll also barely need any ingredients. All you’d need is yams, black lentils, and scallion. This salad will also whet your appetite, so having it as a side will make you enjoy your meal even more!

Ingredients
- 2 yams
- 1 cup black lentils
- 3 scallion stalks
- Coarse black pepper
- ½ tsp. salt
- 2 tbsp. sweet chili
- 1 tbsp. vegetable/olive oil
- Almonds or toasted peanuts (for topping)
Instructions
- Dice your yams and then oven-bake them. You’ll know when they’re done if you can pierce them with a knife or a fork.
- Put your black lentils in water and then cook them until boiling. You’ll need to keep them boiling for 20 minutes, so start your timer only when they start boiling.
- Slice your scallion stalks into rings.
- Add your yams and scallion rings to the lentils.
- Add a tasty dressing of salt and pepper with sweet chili and oil.
- Top everything with toasted peanuts or almonds.
