Course: Lunch, Salad
Cuisine: Mediterranean

Ingredients

  • 2 yams
  • 1 cup black lentils
  • 3 scallion stalks
  • Coarse black pepper
  • ½ tsp. salt
  • 2 tbsp. sweet chili
  • 1 tbsp. vegetable/olive oil
  • Almonds or toasted peanuts (for topping)

Instructions

  • Dice your yams and then oven-bake them. You’ll know when they’re done if you can pierce them with a knife or a fork.
  • Put your black lentils in water and then cook them until boiling. You’ll need to keep them boiling for 20 minutes, so start your timer only when they start boiling.
  • Slice your scallion stalks into rings.
  • Add your yams and scallion rings to the lentils.
  • Add a tasty dressing of salt and pepper with sweet chili and oil.
  • Top everything with toasted peanuts or almonds.
