Equipment
Ingredients
- 2 tbsp. olive oil
- 1 onion (chopped)
- 2 carrots (diced small)
- 2 celery stalks (cut)
- 4 garlic cloves (minced)
- 2 zucchinis (diced)
- 2 tomatoes (cut (not necessary to peel))
- Salt (to taste)
- Black pepper (to taste)
- 1 tbsp. soup mix
- ½ cup tomato paste (100 g)
- 5 cups water
- A handful of parsley (or cilantro, chopped)
- 1 cup wheat (or any other addition you like – rice, beans, pasta, lentils, etc.)
Instructions
- Pour and heat the olive oil in a pot, then add onions, celery, and carrots. Keep mixing them for around 3 minutes until they get a translucent appearance.
- At the 3-minute mark, add your tomatoes and zucchini. Mix them well and allow them to cook for around 6 minutes.
- Add some salt and pepper, then add water, parsley, and soup and tomato mixes.
- Last but not least, add a cup of wheat (or any desired addition) and use high heat to boil the mixture.
- Don’t keep it boiling or you’ll burn your food. As soon as you bring it to a boil, lower the flame and let it cook for 30 minutes. You know it’s done when the vegetables are soft.
Tips
- It is possible to skip the tomato paste and add Hawaij for soup (middle eastern spice mixture) and beans.
