Ingredients
Salad:
- ¼ purple cabbage (finely cut)
- ½ purple onion (cut into strips)
- 1 carrot (cut into thin sticks)
- 1 mango (diced)
- A handful of peanuts
Dressing:
- 2 tbsp. olive oil
- 1 tsp. date syrup with no sugar added
- ¼ tsp. salt (or to taste)
- Some black pepper
- 2 tbsp. freshly squeezed lemon juice
Instructions
- Place your chopped purple cabbage in a bowl full of cold water and let it soak for a bit—this will ensure the color settles and doesn’t dye the rest of the ingredients.
- Mix all the salad ingredients in one bowl.
- Mix all the dressing ingredients thoroughly in a separate bowl or jar.
- Pour the dressing on top of the salad and sprinkle the peanuts on top.
- Use your kitchen tongs to toss the salad gently, and enjoy!
Tips
- Again, ensure that after cutting the cabbage, you soak it in cold water! Purple cabbage can easily color the rest of your salad, which isn’t something you’d like. Also, strain it well before you mix it with the rest of the ingredients.
