This simple cheese and vegetable pie is tasty, healthy, and a good option for breakfast, lunch, or dinner.

It takes about 5 minutes to prepare and fills the house with a heavenly aroma that’ll have you drooling before you take a bite!

Muffin tin
A grater

Ingredients

  • 6 stalks of scallion
  • 1 carrot (grated)
  • 1 cup green peas (frozen)
  • 1 cup green beans (frozen)
  • ¼ bushel of parsley (chopped)
  • 6 fresh mushrooms (sliced)
  • 2 tablespoons spelt flour (½ oz. / 15g)
  • 2¼ teaspoons baking powder (¼ oz. /10 g)
  • ¼ cup oil (2 oz. /60ml)
  • 4 eggs
  • ½ teaspoon salt
  • A pinch of coarse black pepper
  • ½ block feta cheese (diced if preferred)

Instructions

  • In a large bowl, mix all the ingredients together.
  • Pour the mixture into an oiled tin pan.
  • Bake in the oven at 390°F (200°C) for about half an hour.
