Many people have a hard time including vegetables in their diet, especially when kids are involved. But when cheese is in the equation? Nobody can get enough of them!

This simple vegetarian cheese pie is tasty, healthy, and a good option for breakfast, lunch, or dinner.

It takes about 5 minutes to prepare and fills the house with a heavenly aroma that’ll have you drooling before you take a bite!

Muffin tin
A grater

Ingredients

  • 6 stalks of scallion
  • 1 carrot (grated)
  • 1 cup green peas (frozen)
  • 1 cup green beans (frozen)
  • ¼ bushel of parsley (chopped)
  • 6 fresh mushrooms (sliced)
  • 2 tablespoons spelt flour (½ oz. / 15g)
  • 2¼ teaspoons baking powder (¼ oz. /10 g)
  • ¼ cup oil (2 oz. /60ml)
  • 4 eggs
  • ½ teaspoon salt
  • A pinch of coarse black pepper
  • ½ block feta cheese (diced if preferred)

Instructions

  • In a large bowl, mix all the ingredients together.
  • Pour the mixture into an oiled tin pan.
  • Bake in the oven at 390°F (200°C) for about half an hour.
