- 6 stalks of scallion
- 1 carrot (grated)
- 1 cup green peas (frozen)
- 1 cup green beans (frozen)
- ¼ bushel of parsley (chopped)
- 6 fresh mushrooms (sliced)
- 2 tablespoons spelt flour (½ oz. / 15g)
- 2¼ teaspoons baking powder (¼ oz. /10 g)
- ¼ cup oil (2 oz. /60ml)
- 4 eggs
- ½ teaspoon salt
- A pinch of coarse black pepper
- ½ block feta cheese (diced if preferred)
Instructions
- In a large bowl, mix all the ingredients together.
- Pour the mixture into an oiled tin pan.
- Bake in the oven at 390°F (200°C) for about half an hour.
