Ingredients
Dumplings:
- 7 oz. ground beef (200 g)
- 7 oz. ground chicken breast (200 g)
- ¾ cup rice (rinsed)
- ½ cup semolina (a little more if needed)
- 1 onion (finely chopped)
- Salt
- Coarse black pepper
- A little bit of turmeric
Soup:
- 1 onion (chopped)
- 5 celery stalks (with leaves, roughly cut)
- 6 carrots (sliced into rounds)
- 2 tbsp. chicken soup mix
- Black pepper
- Sweet paprika
- A little bit of turmeric
- 4 dried Persian lemons (optional)
Instructions
- Prepare all your dumpling ingredients and mix them well, preferably using your bare hands.
- Put the mixture in a bowl and let it rest for an hour. Then, check if it needs more semolina and add it if needed.
- In a small pan, heat some oil and fry your chopped onion until it’s golden.
- In your soup pot, add the carrots and celery, then top them off with water so that it’s covering ¾ of the pot’s height.
- Season the soup with the ingredients listed above, then leave the soup to boil.
- While the soup is boiling, grab the bowl of dumpling mixture. Wet your hands, then start forming small balls with the mixture. Make sure not to squeeze them too tight.
- Drop all the balls into the soup, and wait until it boils again. When it does, lower the heat.
- Leave the soup to cook for 10 minutes, then stir the pot’s contents gently to make sure the dumplings don’t stick to the bottom.
- Leave the pot on low heat for 60–75 minutes, then serve.
Tips
Make sure not to squeeze the dumplings too tight, and don’t leave them outside for long. Once you form the balls, drop them in the soup.
