What else can I use for the filling?
This variation of the original recipe calls for white praline, but any praline flavor would work.
However, you could also use a handful of white chocolate chips or a piece from a chocolate bar.
Is 10–12 minutes really enough of a bake time?
Yes! We know it doesn’t sound like much, but the cookies continue stabilizing even when they’re out of the oven.
So, remove them while they’re still soft and resist all urges to overbake!

Ingredients
- 5 oz. sugar (150 g)
- 2 oz. brown sugar (50 g)
- 1 stick butter (soft (100 g))
- 2 eggs
- 1 tsp. vanilla extract/paste
- 2 oz. cocoa powder (60 g)
- 7 oz. white flour (200 g)
- 1 tsp. baking powder
- 1 tsp. baking soda
- 5 oz. white chocolate coins/pralines
Instructions
Cookie Dough Prep:
- Preheat your oven to 350°F (180°C).
- Toss the sugar and butter into a mixer bowl with a flat beater and mix them well.
- Add the vanilla and eggs to the mixer and keep it going.
- Go ahead and add the dry ingredients (baking soda, baking powder, flour, and cocoa powder) to the batter.
- Mix again until you form a homogeneous dough.
- Let the Van Stapele cookie dough chill in the fridge for at least 30 minutes. (The more, the better!)
Assembly:
- Prepare two dough balls for each cookie. One should weigh 1 oz. (25 g), while the other should be around ⅓ oz. (10 g).
- Grab the large ball and flatten it over a cookie sheet lined with parchment paper.
- Put the white chocolate praline in the middle of the flattened dough.
- Flatten the smaller ball and lay it on top, sandwiching the praline.
Secure the edges.
- Repeat the process until your main dough bowl is empty.
Baking and Serving:
- Put the cookie sheet in the oven and bake for 10–12 minutes.
- You can serve the cookies cold. But if the gooey center is what you’re after, we’d recommend serving them warm.
Tips
- The ideal spot for the cookie sheet is the middle rack.
- Try to arrange a maximum of 15 cookies on each sheet because those bad boys tend to spread out.
- If possible, opt for dark brown sugar—the extra molasses can do wonders for the flavor profile!
