- 4 cups flour (17⅔ oz. /500gr)
- 1 tablespoon dry yeast (½ oz. / 15g)
- 1 heaping teaspoon honey
- 3 tablespoons olive oil
- ½ tablespoon salt
- ½ cup seltzer
- 1 cup lukewarm water
Instructions
- Mix all the ingredients (sans the water and salt) in a large bowl.
- Add the water gradually and knead. When you’re almost done kneading, add the salt.
- Leave the tortilla dough to rise for an hour.
- Split the dough into 8-10 balls and let them rest once again for 15 minutes.
- Sprinkle flour on your working surface and roll each ball from the center to the edges until it’s a thin sheet.
- Place the rolled dough in a heated iron skillet.
- Cook for 1-1.5 minutes, flip, and let the other side cook for about the same time.
Tips
Once you take the tortilla out of the skillet, wrap it in a towel to keep it from drying out.
Don’t rush the dough rest period.
