If you’re in the mood for some fried goodness and want to try something new, try today’s chickpea hummus sambusak recipe.

This traditional Iraqi dish is a crispy sambusak dough with seasoned ground chickpeas and onions filling coupled with olives and cucumbers on the side, close your eyes, and get ready for a trip to the middle east!

It’s delicious, nostalgic, and will have you licking your fingers after every bite!

Ingredients

For the sambusak filling:

  • 1 1/2 cups Chickpeas (12 fluid ounces/350 milliliters, soaked in water with 1 teaspoon (0.2 ounces/5 grams) of baking soda for a minimum of 12 hours.)
  • 2 Chopped onions
  • 1 Tsp Salt (0.2 ounces/5 grams)
  • 1/2 Tsp Paprika powder (0.1 ounces/2.5 grams)
  • 2 Tbsp Cumin powder (1 ounce/28 grams)
  • 1/2 Tsp Shatta pepper (0.1 ounces/2.5 grams, optional; for spicy food lovers)
  • 1/4 cup olive oil (2 fluid ounces/60 milliliters)
  • The white of one egg

For the sambusak dough:

  • 3 1/2 Cups White flour (13 ounces/440 grams)
  • 2 Tsp Dry yeast (0.4 ounces/10 grams)
  • 1/2 Tsp Salt (0.1 ounces/2.5 grams)
  • 2 Tbsp Sugar (0.7 ounces/25 grams)
  • 3 Tbsp Olive oil (0.4 fluid ounces/12 milliliters)
  • 1 Cup Chickpeas water (8 fluid ounces/240 milliliter ( read the instructions below for an explanation))

Instructions

Instructions of chickpea sambusak

    To make the chickpea sambusak filling:

    • Strain the soaked chickpeas and wash them.
    • Soak the chickpeas on medium heat until soft to mash with your finger.
    • Strain the chickpeas but save 1 cup of their cooking water.
    • Coarsely chop or grind the chickpeas.
    • Fry the onion until golden brown in a pan.
    • Add the chopped chickpeas and the seasonings, mix well then take the pan off the heat.
    • Stir in the egg white then set the mixture aside to cool down.

    To make the sambusak dough:

    • Mix the flour, yeast, and sugar in a bowl.
    • Add the rest of the ingredients and mix until the dough is smooth and even.
    • Cover the bowl with a towel for an hour to let the dough rise.
    • Divide the dough into about 20 balls, then let them rise for an extra 10 minutes.

    To make the sambusak chickpea:

    • On a floured surface, flatten each ball into approximately a 4-inch wide circle.
    • Put one tablespoon of the filling in the middle of each circle then fold it into half a circle and pinch the edges well.
    • If you want crispier sambusak, fry them immediately after folding. If you want softer sambusak, let them rise for 10 more minutes before frying.
    • On medium heat, fry for 2 minutes on each side until golden brown.

    Tips

    • Top the chickpea sambusak with some freshly chopped parsley and serve alongside hot pepper salad.
    • Be careful not to make the dough too flat, otherwise, the chickpea sambusak may break apart in the frying pan. Try to flatten each ball into a circle about 4 inches wide.
