If the fruit I choose to make the cake with is strawberries, what can I moisten the cake with?
Usually, simple syrup is the go-to mixture for moistening cake bases.
However, using the liquids that come out of strawberries after sprinkling sugar over them and leaving them for a while is much better for this recipe.
What about baking powder?
No need to use it. This recipe is excellent the way it is.

Ingredients
Cake:
- 4 or 5 eggs (separated)
- 1 cup sugar
- ½ cup oil
- 1 cup all-purpose flour
- 3 oz. Jell-o mix (90 g)
- 1 package of fresh strawberries / mixed berries / canned fruit cocktail
Frosting:
- 2 cups heavy cream (500 ml)
- 3 oz. vanilla instant pudding mix (80 g)
- 1 cup milk
Instructions
Frosting:
- In a large deep mixing bowl, add all the frosting ingredients together
- Whip them up on medium-high speed until firm and smooth
- Be careful not to overmix the frosting
Cake:
- Preheat the oven to 350°F (180°C)
- In a mixing bowl, beat the egg whites on high speed until foamy
- While still mixing, gradually add the sugar, then the yolks
- Add the oil and keep mixing for another four minutes
- Lower the speed, then gradually add the flour
- Beat until combined completely
- Oil a nine-inch round baking pan
- Pour the batter into the pan
- Bake for 35 minutes, then check the cake with a toothpick
- Allow baking for five more minutes if the toothpick doesn’t come out dry
- Take the cake out and allow it to cool completely
Assembly:
- Cut the cake into two layers
- Use a spoon and moisten the bottom layer with the cocktail syrup
- Spread the frosting over the cake’s bottom half
- Put the other half back in place
- Place the fruits on top with some syrup
- Prepare the Jell-o mix as instructed on the package
- Allow it to cool a bit before pouring it onto the fruits
