Super Tasty Honey Muffins Recipe
Equipment
Ingredients
- ½ cup boiling water
- 1 tea bag
- 3 eggs (unseparated)
- ¼ cup sugar
- ½ cup oil
- ½ cup + 2 tbsp. honey
- 1 tbsp. instant coffee
- 1 tsp. cinnamon
- 2¼ tsp. baking powder (10 g)
- 1½ cups flour
Instructions
- Preheat the oven to 340°F (170°C)
- Place a tea bag in a cup of boiling water and let brew for five minutes
- Put the oil and sugar into a large mixing bowl and whisk by hand until creamy
- Add the half cup of honey and eggs (one at a time) while still whisking
- Add the flour and cinnamon gradually and keep beating the mixture
- Pour in the previously prepared lukewarm tea and keep mixing to get rid of all clumps
- Oil the muffin pan before pouring the batter in (only fill the muffin cups three fourth in)
- Top the muffin batter with walnut nibs
- Bake for no more than half an hour so the muffins don’t dry out (until the toothpick inserted in the center comes out clean)
- Mix the two tablespoons of honey with four tablespoons of boiling water to make a glaze
- Pour the glaze over the fresh-out-of-the-oven muffins
- Place the muffins into a plastic bag while still warm (to keep them soft)
- Decorate with frosting (optional)
- Serve and enjoy
- Store leftovers in an airtight container at room temperature (they can last up to three days)
