We all enjoy a slice of delicious apple cakes with that aromatic scent of cinnamon. However, it may not be the healthiest dessert nor the best treat for many diets. Therefore, we bring you an improved sugar-free version made with almond flour to try.
Not only is this apple cake recipe quick and easy to make, prepared in only one bowl, but it’s also fantastic for those with special dietary needs. So, whether you’re on a keto diet, low-carb diet, or suffering from gluten intolerance, this recipe is for you.

Sugar-Free Apple Cake With Almond Flour
Ingredients
- 2 apples (diced (whichever type you like, I used Hermon))
- 1 stick butter (100 g)
- 2-3 tbsp. sweetener
- 1 tsp. cinnamon
- 2½ cups almond flour
- ¼ cup coconut flour
- 4 large eggs
- 1 tsp. aluminum-free baking powder
- ½ cup natural maple syrup (optional: replace with sweetener, and add ¼-½ cup heavy cream, in order to balance liquids and dry ingredients)
- A pinch of salt
- 2 oz. chopped pecans (50 g)
Instructions
Cooking the Apples:
- Heat the frying pan over a medium flame and add the butter.
- When the butter melts, add the sweetener and the diced apples.
- Lower the flame and mix the apples with the butter.
- Keep cooking the apples until they become half-soft while stirring now and then.
- Add the cinnamon and mix well.
- Remove the pan from heat, and allow the apples to cool down completely before using.
Cake:
- In a large bowl, add the coconut flour and the almond flour.
- Mix well before adding the salt, baking powder, and sweetener (if you choose to use it).
- Add the chopped pecans and keep stirring until everything is combined.
- Add the eggs and maple syrup (if not replaced with a sweetener).
- In case you want to replace the maple syrup with sweetener, add heavy cream (start with a quarter of a cup and add another if needed).
- Stir well until you have a consistent batter.
- Add the apples with all the butter in the frying pan over the mixture.
- Fold the apples into the batter until completely combined.
- Oil a muffin tin and pour in the batter, filling only three-quarters of the tin’s height.
- Bake in a preheated oven at 350°F (180°C) for 15–20 minutes or until a toothpick comes out with some crumbs on it.
- Remove and allow to cool before serving.
Tips
- For the next try, make a whole apple cake with the same recipe. Just remember that it takes longer to bake (about 30–35 minutes longer), depending on the oven.
