Decorated Strawberry Jelly Sponge Cake

8 oz. paper cup (240 ml)

Ingredients
Cake:
- 4 large eggs
- 1 cup sugar
- ½ cup oil
- 1 tsp. vanilla extract
- 1 cup self-rising flour
- 1 lbs. fresh strawberries (sliced (½ kg))
Whipped Cream:
- 1 package vanilla instant pudding mix (80 g)
- 2 cups heavy cream (500 ml)
- ¾ cup milk
- 1½ tbsp. sugar
Instructions
Cake:
- Preheat the oven to 350°F (180°C).
- Separate the eggs and beat the whites with the sugar until you get a firm foam.
- In another bowl, mix the yolks with the oil and vanilla.
- Mix both the egg whites and the yolk in a folding motion.
- Gradually add the self-rising flour to the eggs and fold to create the batter.
- Oil your baking pan and pour the batter into it.
- Bake the cake in your preheated oven for around 30 minutes.
- While the cake bakes, sprinkle 4 tablespoons of sugar on freshly sliced strawberries and pop them in the fridge.
- Check on the strawberry slices later and strain their liquid.
- Add half a cup of water to the syrupy liquid and mix.
- When the cake is done baking, pour the syrup all over it and let it cool down completely.
Whipped Cream:
- Empty 2 cups of heavy cream, the package of vanilla pudding mix, ¾ cup of milk into an electric mixer.
- Add 1½ tablespoons of sugar and blend everything until it’s all firm.
- Spread the whipped cream over your cooled cake and even it out with a spatula.
- Arrange strawberries on top of the whipped cream.
- Prepare the jello (according to the package’s instructions).
- Scoop the jello with a spoon and cover the cake’s top in one even layer.
- Pop the decorated cake into the fridge and let it stabilize for a few hours.
Tips
- If you’re worried about the toppings being overly sweet, you can use only one tablespoon of sugar while whipping the heavy cream.
- It’s also possible to prepare strawberry syrup by heating the slices with sugar and water in a saucepan.
