These almond flour cookies are tasty to make on a lazy Sunday. They’re easy to make, requiring only one bowl.

Not only are they gluten-free, but the almond flour also gives them a fantastic taste. You can never have enough of them.

Splendid Soft Almond Cookies Recipe

Equipment

Medium-sized baking pan

Ingredients

  • 2 cups almond flour
  • 1 cup shredded coconut
  • ½ cup almond butter
  • ½ cup maple syrup

Instructions

  • Preheat the oven to 350° F (180° C).
  • Mix the butter and maple syrup in a medium bowl.
  • Sift the almond flour over the mixture gradually (almond flour tends to clump together).
  • Stir with a spatula until all the ingredients are combined.
  • Add the shredded coconut and fold.
  • Take small pieces and roll them out into balls.
  • Place the cookie balls over a parchment-paper-lined baking pan, leaving at least two inches in between.
  • Flatten each ball with half a pecan, walnut, or blanched almond.
  • Bake for 15 minutes.

Tips

  • The cookies harden once you remove them from the oven. You can always keep their great taste and freshness if you store them in the freezer.
