Not only are they gluten-free, but the almond flour also gives them a fantastic taste. You can never have enough of them.

Splendid Soft Almond Cookies Recipe

Ingredients
- 2 cups almond flour
- 1 cup shredded coconut
- ½ cup almond butter
- ½ cup maple syrup
Instructions
- Preheat the oven to 350° F (180° C).
- Mix the butter and maple syrup in a medium bowl.
- Sift the almond flour over the mixture gradually (almond flour tends to clump together).
- Stir with a spatula until all the ingredients are combined.
- Add the shredded coconut and fold.
- Take small pieces and roll them out into balls.
- Place the cookie balls over a parchment-paper-lined baking pan, leaving at least two inches in between.
- Flatten each ball with half a pecan, walnut, or blanched almond.
- Bake for 15 minutes.
Tips
- The cookies harden once you remove them from the oven. You can always keep their great taste and freshness if you store them in the freezer.
