Simple Vegetarian Cabbage Rolls Recipe
Ingredients
- 1 cabbage
Filling:
- 3 cups round rice
- Celery (finely chopped)
- Parsley (chopped)
- 3 tomatoes (peeled and finely chopped)
- 3 onions (chopped and fried)
- Salt
- Pepper
- Lemon
Sauce:
- 2 cups hot water
- ½ cup lemon juice
- ½ cup olive oil
- 1 cup chicken soup mix
- Salt and pepper (to taste)
Instructions
- Pop the cabbage in the freezer for at least 24 hours.
- Take it out and let thaw until it’s soft.
- Pull the leaves apart and rinse them well.
- Boil some water and soak the rice for a bit before straining.
- Put the strained rice in a bowl and add the celery, parsley, tomatoes, and fried onions.
- To the same bowl, add the seasoning blend (salt, pepper, and lemon) and mix well.
- Put the leaves one by one on your work surface, and start stuffing and rolling.
- Arrange the stuffed leaves neatly in a pot.
- Mix all the sauce ingredients in a large bowl.
- Pour the sauce over the pot, and try to do it as evenly as possible.
- Cook the pot (covered) until the cabbage leaves for 50 minutes.
Tips
- The freezing step might sound weird at first, but it makes the leaves pliable and easy to separate. So, don’t rush the process!
