Simple Apple Sponge Cake
Equipment
Ingredients
- 4 Granny Smith apples (diced small)
- 4 eggs (unseparated)
- 7 oz. butter or butter substitute (melted (200 g))
- 1 cup sugar
- 2¼ tsp. baking powder (10 g)
- 1½ cups flour
- 1 tsp. cinnamon
- 1 cup walnut nibs
Instructions
- Mix the eggs with the sugar and melted butter in a mixer bowl for at least 5 minutes. By then, you’ll notice that the mixture’s texture turned creamy.
- Slowly add baking powder and flour to the mix and continue beating for 2 minutes.
- Stop the mixer and add the diced apples, walnut nibs, and cinnamon.
- Mix again but using a rubber spatula.
- Oil the cake pan.
- Pour the batter into the pan and bake in a preheated oven at 340°F (170°C) for 40 minutes.
- Once the 40 minutes are up, pick the cake with a toothpick to check if it’s ready.
- If the toothpick comes out clean, remove the cake, allow it to cool, and powder it with confectioner’s sugar. If the toothpick isn’t clean when you take it out, leave the cake for a couple more minutes.
