Yet, nothing in the prep phase is too rough for a beginner to tackle, especially when you follow the step-by-step guide.
Be warned, though. This cake might become a hit with your family in no time. Odds are, you’ll keep making it over and over again.

Shockingly Easy Lotus Cake Recipe

Ingredients
- 1 package Lotus cookies (roughly crushed)
- ½ stick butter (melted (50 g))
- 2 cups heavy cream (500 ml)
- 2 packages vanilla instant pudding mix
- 1 cup milk
- 4 tbsp. Lotus spread
- 1 tbsp. Lotus spread to mix with the cream
Instructions
- Take the crushed cookies and butter and mix them well in a bowl.
- Scoop the mixture into the cake pan and pat it around to form an even, flat crust.
- Pop the crust pan in the freezer for now.
- Grab a mixer and whip the heavy cream, milk, and pudding mix.
- Once the whipped cream is homogeneous and thick, add a tablespoon of Lotus spread and mix gently.
- Take the crust out of the freezer and pour the whipped cream and Lotus mix into it.
- Flatten the cream and pop the pan back in the freezer for 30 more minutes.
- Scoop four tablespoons of Lotus spread into a microwavable bowl and heat it for 30 seconds.
- Stir the melted spread and let it cool down slightly.
- Remove the cake from the freezer and pour the heated Lotus spread over it.
- Rock the pan back and forth to cover the top evenly.
- Freeze the whole cake for 3–4 hours, then transfer it to the fridge until you’re ready to serve.
Tips
- Make sure your cookies are roughly ground to get the crust texture just right.
- We know there are a lot of freezing steps involved, but each and every one is vital! Otherwise, the cake layers won’t hold their form well enough, and you’ll end up with a hot mess.
- If you’re having trouble getting an even cake top, try using a spatula or any flat kitchen utensil to “tidy” the surface up.
