But the trick is knowing how to keep the textures and flavors interesting. Otherwise, you’ll be eating soggy, overcooked mush.

Sauteed Green Beans With Mushrooms Recipe
Ingredients
- 1 bag green beans (French or regular (600 g))
- 6 champignon mushrooms (sliced)
- 2 tbsp. olive oil
- 1 tbsp. sesame oil
- 4 garlic cloves (sliced)
- Salt and black pepper (to taste)
- 3 tbsp. teriyaki sauce
- 3 tbsp. date syrup
- 3 tbsp. sweet chili
- 4 tbsp. sesame seeds
- ¾ cup broken peanuts
- ¾ cup pecans (roughly chopped)
- ¾ cup pistachios
- ¾ cup walnuts (roughly chopped)
- ¾ cup blanched almonds
Instructions
- Start by bringing a pot of water with a teaspoon of salt to a boil.
- Cook the green beans in the boiling water until they’re slightly soft. (This should take 7 minutes or so.)
- Strain the beans and set them aside for now.
- Grab a wok and heat the olive oil in it.
- Once the oil is hot, add the garlic slices and fry them for 30 seconds while stirring continuously.
- Toss the nut mix into the wok and stir-fry for around 2 minutes.
- Drop the mushroom slices into the mix and fry for 2–3 minutes.
- Add the strained green beans to the same wok.
- Season with salt, pepper, and half the sesame seed amount (2 tablespoons) and stir-fry for 5 minutes.
- Add the liquid ingredients (teriyaki sauce, sweet chili, sesame oil, and date syrup) and stir to cover all the components with the sauce.
- Let everything fry for an additional 2–3 minutes.
- Move to a serving plate and top with the remaining amount of the sesame seeds.
Tips
- If you don’t have a wok, a frying pan or a skillet will do just fine. Just make sure it’s wide and flat to increase the surface contact.
