Preparation Time: 1 hour hr
Course: Lunch
Cuisine: Mediterranean

Ingredients

  • 4 portions of salmon filet (skinless)
  • 2 oz. cashews (crushed (50 g))
  • 2 oz. pine nuts (untoasted (50 g))

Dressing:

  • 3 tbsp. olive oil
  • 2 tbsp. minced garlic
  • 2 tbsp. soy sauce
  • 2 tbsp. teriyaki sauce
  • 1 tsp. coarse black pepper
  • ½ cup dry parsley
  • 1 tsp. paprika

Instructions

Prepare the Dressing:

  • Place the minced garlic in a bowl
  • Add the olive oil, soy sauce, teriyaki sauce, and dry parsley
  • Season with paprika and black pepper
  • Mix well until everything is combined

Make the Salmon:

  • Rinse the salmon pieces and strain them
  • Put the salmon pieces into the dressing bowl
  • Let the dressing coat the fish from all sides
  • Cover the bowl and allow the salmon pieces to rest in the fridge for about two hours
  • Preheat the oven to 350°F (180°C)
  • Add two layers of foil at the bottom of a baking sheet
  • Place the salmon pieces over the foil and drizzle with the remaining dressing
  • Sprinkle the crushed cashews and pine nuts on the fish
  • Cover with another layer of foil and seal the edges (to keep any liquids from seeping through)
  • Bake for 15 minutes (you can uncover the broil it afterward if you prefer a crispy finish)

Tips

  • Start by rinsing the salmon pieces. Then, soak them in lemon juice and vinegar for about 15 minutes. This helps remove any bacteria on the surface.
