Try this salmon recipe with a different kind of dressing for a change.

Ingredients
- 4 portions of salmon filet (skinless)
- 2 oz. cashews (crushed (50 g))
- 2 oz. pine nuts (untoasted (50 g))
Dressing:
- 3 tbsp. olive oil
- 2 tbsp. minced garlic
- 2 tbsp. soy sauce
- 2 tbsp. teriyaki sauce
- 1 tsp. coarse black pepper
- ½ cup dry parsley
- 1 tsp. paprika
Instructions
Prepare the Dressing:
- Place the minced garlic in a bowl
- Add the olive oil, soy sauce, teriyaki sauce, and dry parsley
- Season with paprika and black pepper
- Mix well until everything is combined
Make the Salmon:
- Rinse the salmon pieces and strain them
- Put the salmon pieces into the dressing bowl
- Let the dressing coat the fish from all sides
- Cover the bowl and allow the salmon pieces to rest in the fridge for about two hours
- Preheat the oven to 350°F (180°C)
- Add two layers of foil at the bottom of a baking sheet
- Place the salmon pieces over the foil and drizzle with the remaining dressing
- Sprinkle the crushed cashews and pine nuts on the fish
- Cover with another layer of foil and seal the edges (to keep any liquids from seeping through)
- Bake for 15 minutes (you can uncover the broil it afterward if you prefer a crispy finish)
Tips
- Start by rinsing the salmon pieces. Then, soak them in lemon juice and vinegar for about 15 minutes. This helps remove any bacteria on the surface.
