Antipasti is a traditional Italian appetizer course typically served before the main meal. The term “antipasti” translates to “before the meal” in Italian, and its purpose is to whet the appetite and prepare the palate for the upcoming meal.
While there are many variations of antipasti, today we’ll focus on a straightforward option: a roasted vegetable antipasti mix. Simply wash, slice, and bake the vegetables to create a flavorful and enticing appetizer.
This is difinitely a delicious way to showcase the natural flavors of the vegetables and add a touch of rustic charm to your table.

Ingredients
- Yams
- Zucchinis
- Garlic heads (halved)
- Assorted colors bell peppers
- Cherry tomatoes
- Potatoes
- Any other vegetables you’d like
- Salt
- Black pepper
- Olive oil
Instructions
- Pre Heat the oven to 430°F (220°C).
- Prepare the vegetables by slicing them into even-sized pieces. Toss them with olive oil, salt, pepper, and any desired herbs or spices. You can also marinate them in a mixture of olive oil, balsamic vinegar, and herbs for added flavor.
- Arrange the prepared ingredients on a baking sheet lined with parchment paper or aluminum foil, ensuring they are spread out in a single layer.
- bake for approximately 15-20 minutes, or until the vegetables are tender and slightly charred.
- Once baked, remove the antipasti from the oven and let them cool slightly before serving.
