But here’s the thing:
Potatoes don’t need hearty and creamy fillings to shine. They can make a perfectly satisfying dish on their own.
A thin oil coat, some spices and herbs, and a small toaster oven are all you need to bring out the best in these starchy veggies!

Making Roasted Potatoes in Toaster Oven
Ingredients
- 20 small potatoes or 5 big ones (cooked in water until soft)
- ½ cup olive oil
- Coarse black pepper
- 3 garlic cloves (minced)
- ½ bushel parsley (chopped)
- Kosher salt
- Lemon zest from ½ lemon
Instructions
- Strain the boiled potatoes and cut them into halves if they’re small or into quarters if they’re big/medium.
- Line a baking pan with parchment paper and pour ¼ cup of olive oil on it, then sprinkle some black pepper.
- Arrange the potato halves (peel facing up) on the pan.
- Put the pan on the highest rack and bake at 400°F (200°C) until the bottom sides are all nice and golden.
- While the potatoes are baking, mix the rest of the olive oil with the garlic, parsley, salt, and lemon zest in a bowl.
- Once the potatoes are done cooking, take them out of the oven and pour the oil bowl’s contents over them.
- Brush the oil and spices into the potatoes to coat the sides evenly.
Tips
- Don’t skip the parboil. It’s the key to getting crispy edges without charring or burning. Plus, it helps reduce roasting time!
