Why bother adding water from the side?
When we say “add water from the side,” we mean pouring it near the edge of the baking pan. This way, you won’t wash the marinade away from the chicken or the potatoes.
How do I “baste” the chicken?
Grab a spoon, scoop some of the sauce from the bottom of the pan, and pour it over the drumsticks. Don’t forget to pour some on the potatoes as well!
Do I need to cover the chicken with aluminum foil?
No, just flip the pieces, baste every once in a while, and you’ll be all set.

Roasted Drumsticks and Potatoes
Equipment
Ingredients
- 4 chicken leg quarters (possibly cut)
- 8 red potatoes (cut into eighths)
- 8 thyme sprigs (roughly chopped)
- Marinade:
- 5 tbsp. canola oil
- 1 tbsp. date syrup
- 1 tbsp. soy sauce
- 1 tbsp. chicken grilling seasoning
- 1 tsp. black pepper
- 1 tsp. turmeric
- ½ tbsp. chicken soup mix
- ½ tsp. salt
Instructions
- Mix all the marinade ingredients well with the chicken and potatoes.
- Line the baking pan with parchment paper.
- Put the marinated mix into the pan.
- Add the chopped thyme sprigs to the top. (Important step!)
- Pour a cup of water from the side.
- Preheat the oven at 375°F (190°C) and put the pan to bake.
- Flip the chicken and baste regularly.
- Roast until the drumsticks are golden, or about one to one and a half hours.
Tips
- Don’t skip the parchment paper lining. It’ll prevent the liquid from evaporating too quickly and keep the chicken as tender as possible!
