Ingredients

  • 1 medium-size cauliflower
  • 5 scallion stalks (chopped)
  • 1 bushel of parsley (chopped)
  • A pinch of salt
  • Coarse black pepper (to taste)
  • 2 garlic cloves (minced)
  • 2-3 tbsp of mayonnaise (light mayonnaise is recommended to reduce calorie amount)

Instructions

  • First, cut the cauliflower into florets and soak them in water, salt, and vinegar for about ten minutes.
  • Make a simple dressing by mixing the mayonnaise, salt, pepper, and garlic.
  • Wash the cauliflowers and cut them into bite-sized pieces, or leave them as is.
  • Then, place the cauliflower in a large bowl, then add the scallions, parsley, and dressing.
  • Lastly, refrigerate the salad for an hour so the flavors develop, and enjoy!
