- 2 lbs. flour (1 kg (if the dough is a little sticky, add some more))
- 2 eggs with 1 yolk
- ½ cup sugar
- 1½ tbsp. vanilla sugar (20 g)
- ¼ cup oil
- 2 tbsp. dry yeast
- 2 cups lukewarm water (as needed – start with 1½ cups)
- A pinch of salt
- Lemon zest
Instructions
- Here’s the recipe for the perfect powdered sugar donuts:
- Grab your mixer’s bowl, and start by sifting the flour, then add the yeast and stir the mixture. Then, add the sugar and vanilla sugar, and knead the mixture using the kneading hook.
- Lastly, add the salt. Make sure to knead the mixture well before adding the salt because it shouldn’t touch the yeast.
- Add the rest of the ingredients to the mixer bowl, then start kneading at a low speed for three minutes.
- Increase the speed at the 3-minute mark, and let the mixture knead for another three minutes until the dough is smooth enough. It should be soft rather than sticky.
- Let the dough rest for an hour, then knead it to reduce its volume. Then, cover it with a thin towel and let it rise for another 30 minutes.
- Meanwhile, cut your parchment paper into squares and put them on a towel.
- When the dough is done rising, roll it into a 1-inch thick sheet, and start forming donut shapes. You can sprinkle flour on your hands to make the process easier.
- Place the donuts on the parchment paper pieces and let them rise for around 30 minutes. Make sure to cover them with a thin towel while rising so that they maintain their moisture.
- Fill a pot halfway through with oil, then heat it to 325°F (160°C). It should be hot but not boiling and deep enough for the donuts to submerge.
- Fry the donuts on each side for around a minute or until they’re nice and golden.
- Powder the donuts with the confectioner’s sugar, and serve!
