Not that far from potato fritter, these potato pancakes are perfect for a healthy, light breakfast or lunch.
You can enjoy them with sour cream, refreshing yogurt, and fresh salads, or just by themselves.

Ingredients
- 4 potatoes
- 2 carrots
- 2 eggs
- 3 tbsp. flour
- Turmeric
- Salt
- Black pepper
- A pinch of cumin
Instructions
- Cook potatoes and carrots in water until soft, then strain and allow to cool.
- Peel cooked potatoes and carrots, mash the potatoes and grate the carrots on a grater—you can add onions if you’d like.
- Strain all liquids and add the spices, eggs, and flour.
- Taste-test and adjust to preference.
- Place in the fridge for 15 minutes.
- After the 15 minutes, take out the bowl and heat a small, non-stick pan with just a drop of oil.
- While the pan is on the cooker, wet your hands to create small balls from the mixture.
- Press it slightly flat and place it in the hot pan.
- Don’t touch the pancakes too much; flip them over gently once after they’re nice and brown on one side.
