Not that far from potato fritter, these potato pancakes are perfect for a healthy, light breakfast or lunch. 

You can enjoy them with sour cream, refreshing yogurt, and fresh salads, or just by themselves.

Savory Potato Pancake Recipe with Mashed Potatoes

Ingredients

  • 4 potatoes
  • 2 carrots
  • 2 eggs
  • 3 tbsp. flour
  • Turmeric
  • Salt
  • Black pepper
  • A pinch of cumin

Instructions

  • Cook potatoes and carrots in water until soft, then strain and allow to cool.
  • Peel cooked potatoes and carrots, mash the potatoes and grate the carrots on a grater—you can add onions if you’d like.
  • Strain all liquids and add the spices, eggs, and flour.
  • Taste-test and adjust to preference.
  • Place in the fridge for 15 minutes.
  • After the 15 minutes, take out the bowl and heat a small, non-stick pan with just a drop of oil.
  • While the pan is on the cooker, wet your hands to create small balls from the mixture.
  • Press it slightly flat and place it in the hot pan.
  • Don’t touch the pancakes too much; flip them over gently once after they’re nice and brown on one side.
