Potato Fritters With Scallion: The Ultimate Lunch Idea!

Ingredients

  • 5 potatoes
  • 1 onion
  • 2 eggs
  • 2 tablespoons breadcrumbs (or Matzah meal on Passover)
  • 5 stalks of scallion (chopped)
  • A handful of parsley (chopped)
  • A handful of cilantro (chopped)
  • A pinch of salt
  • Black pepper (to taste)
  • Hot chili spice (to taste)

Instructions

  • Peel the potatoes and onion then wash and grate them coarsely into a large bowl.
  • Place the grates in a fine strainer and drain out all the liquids.
  • Transfer the grates back into the bowl.
  • Add the rest of the ingredients and mix well until you end up with a batter that’s a bit runny.
  • Heat up some oil in a pan.
  • Using a serving spoon, take scoops from the batter and drop each into the hot oil followed by slight flattening.
  • Fry the fritters for about 2 minutes on each side until golden.
  • Remove the fritters from the pan onto a paper towel and let them cool.
  • Serve with a topping of sour cream and chopped scallion.
