Ingredients
- 5 potatoes
- 1 onion
- 2 eggs
- 2 tablespoons breadcrumbs (or Matzah meal on Passover)
- 5 stalks of scallion (chopped)
- A handful of parsley (chopped)
- A handful of cilantro (chopped)
- A pinch of salt
- Black pepper (to taste)
- Hot chili spice (to taste)
Instructions
- Peel the potatoes and onion then wash and grate them coarsely into a large bowl.
- Place the grates in a fine strainer and drain out all the liquids.
- Transfer the grates back into the bowl.
- Add the rest of the ingredients and mix well until you end up with a batter that’s a bit runny.
- Heat up some oil in a pan.
- Using a serving spoon, take scoops from the batter and drop each into the hot oil followed by slight flattening.
- Fry the fritters for about 2 minutes on each side until golden.
- Remove the fritters from the pan onto a paper towel and let them cool.
- Serve with a topping of sour cream and chopped scallion.
