We wouldn’t recommend it. However, if you don’t have any seltzer on hand, you could use some water mixed with baking soda.

Must-Try Pomme Souffle Recipe
Ingredients
- 3 large red potatoes (thinly sliced (less than ¼” (½ cm) thickness))
- 1 egg
- ½ cup self-rising flour
- ½ cup seltzer
- ½ tsp. baking powder
- ¼ tsp. turmeric
- 1 tsp. salt
- A pinch of ground black pepper
Instructions
- Bring a pot of water to a boil and cook the sliced potatoes for 5 minutes.
- Strain the potatoes and set them aside for now.
- In a large bowl, mix all the remaining ingredients to form a thick batter.
- Put the boiled slices in the batter bowl and soak for 5 minutes.
- Deep-fry the potatoes until they’re fluffy, preferably 6–7 slices at a time.
- Put the puffed-up slices on a paper towel to soak up excess oil.
Tips
- The batter texture we’re looking for here is almost like tahini. So, keep mixing until everything is thick and homogeneous!
