Festive Pomegranate and Bulgur Salad Recipe

Ingredients

  • ½ a pomegranate
  • 1 cup thin bulgur (soaked in lukewarm water for a half hour)
  • 3 tbsp. blanched slivered almonds
  • 3 tbsp. craisins
  • Walnuts / glazed pecans (to taste)
  • Cilantro (finely chopped (generously))
  • 2 Bundles of Parsley (finely chopped)
  • Mint (chopped (optional, about 15 leaves))
  • Olive oil (to taste)
  • Freshly squeezed lemon (to taste)
  • 2 tbsp. orange juice
  • A pinch of salt
  • A pinch of black pepper

Instructions

  • When the bulgur is done soaking, drain the water and strain it well. Then, put it in a new dry bowl.
  • Add all the other ingredients to the bowl—pomegranates, parsley, cilantro, mint, craisins, walnuts, and almonds. Then, stir them together.
  • Grab a small cup or a jar, and add the following ingredients for the dressing: lemon juice, olive oil, orange juice, and salt and pepper. Cover the jar and shake the mixture well so everything blends together.
  • Pour the dressing over the salad and toss it well. Then, serve and enjoy!
