Based on parsley and cilantro, this homemade chimichurri sauce is packed with tasty spices to give you a combination of flavors that can easily complement any dish and take it to the next level!

What should I use this dressing on?

It goes great with meats, chicken, fish, and sandwiches.


Can I use apple cider vinegar instead of balsamic vinegar?

Yes, but be sure to use a smaller amount because apple cider vinegar is much stronger.

Ingredients

  • A bushel of parsley
  • A bushel of cilantro
  • 1 red bell pepper
  • ½ green hot pepper
  • 7 garlic cloves
  • 1 medium size red onion
  • ½ cup olive oil (4 foz/120 ml)
  • ⅓ cup balsamic vinegar (2⅔ foz/80 ml)
  • 1 ½ tablespoons dry oregano
  • 1 teaspoon salt
  • 1 teaspoon crushed black pepper

Instructions

  • Put all the vegetables and greens in a food processor.
  • Pulse-chop several times until the ingredients are well combined.
  • Add the olive oil, balsamic vinegar, and spices then pulse-mix a couple of times. If you don’t have balsamic vinegar, use regular vinegar.
  • Alternatively, you can do the previous step manually in a mixing bowl.
  • Transfer the sauce to a serving bowl for use.
  • You can keep the leftover chimichurri dressing in a tightly closed container in the fridge. You can also store it in the freezer.
