Ingredients
Base:
- 1 egg
- ½ cup sugar
- ½ cup flour
- 2 egg yolks
- 1 butter stick (100 g)
- 1½ cups cornstarch
- ½ tbsp. baking powder
- 2 tbsp. shredded coconut
- 7 oz. dulce-de-leche (200 g)
- 2 tbsp. shredded coconut
Mousse:
- ¼ cup milk
- 1 cup milk
- 25 fl. oz. heavy cream (750 ml)
- 7 oz. white chocolate (200 g)
- 1 package vanilla instant pudding mix
- 1 cup shredded coconut
Frosting:
- 2 tbsp. milk
- 7 oz. dulce-de leche (200 g)
- Garnish:
- ½ cup shredded coconut (or more, as needed)
Instructions
Base:
- Place the dulce-de-leche and two tablespoons of shredded coconut on the side.
- Mix the rest of the ingredients into a smooth dough.
- Move the dough into a baking pan and pat it down firmly.
- Bake in a preheated oven at 320°F (160°C) for 20 minutes, then let it cool.
- Spread the dulce-de-leche on the crust, then sprinkle the two spoons of shredded coconut on it.
- Let it cool down completely.
Mousse:
- Place the white chocolate in a bowl with ¼ cup milk in the microwave and melt it.
- As it’s cooling down, mix the heavy cream, cup of milk, and vanilla pudding mix until it thickens.
- After that, add the shredded coconut and the white chocolate mixture and combine until evenly distributed.
- Pour the new mixture on the crust and let it cool for about four hours in the freezer—you can leave it overnight if you like.
Frosting:
- Place the dulce-de-leche and milk in the microwave and heat them up until they’re lukewarm.
- Stir them both and pour the mixture over the cake.
- Set the cake in the freezer for about ten minutes to allow it to stabilize.
- Once the ten minutes are up, remove the cake from the pan and decorate it with the shredded coconut.
