If you want to get a good taste of a Spanish treat, then you must try Alfajores cakes. They’re tender yet firm, with a chocolate cover that crumples off slowly as you bite into it! And the best part? It’s not that hard to make!

The Perfect Alfajores Cake Recipe

Ingredients

Base:

  • 1 egg
  • ½ cup sugar
  • ½ cup flour
  • 2 egg yolks
  • 1 butter stick (100 g)
  • 1½ cups cornstarch
  • ½ tbsp. baking powder
  • 2 tbsp. shredded coconut
  • 7 oz. dulce-de-leche (200 g)
  • 2 tbsp. shredded coconut

Mousse:

  • ¼ cup milk
  • 1 cup milk
  • 25 fl. oz. heavy cream (750 ml)
  • 7 oz. white chocolate (200 g)
  • 1 package vanilla instant pudding mix
  • 1 cup shredded coconut

Frosting:

  • 2 tbsp. milk
  • 7 oz. dulce-de leche (200 g)
  • Garnish:
  • ½ cup shredded coconut (or more, as needed)

Instructions

Base:

  • Place the dulce-de-leche and two tablespoons of shredded coconut on the side.
  • Mix the rest of the ingredients into a smooth dough.
  • Move the dough into a baking pan and pat it down firmly.
  • Bake in a preheated oven at 320°F (160°C) for 20 minutes, then let it cool.
  • Spread the dulce-de-leche on the crust, then sprinkle the two spoons of shredded coconut on it.
  • Let it cool down completely.

Mousse:

  • Place the white chocolate in a bowl with ¼ cup milk in the microwave and melt it.
  • As it’s cooling down, mix the heavy cream, cup of milk, and vanilla pudding mix until it thickens.
  • After that, add the shredded coconut and the white chocolate mixture and combine until evenly distributed.
  • Pour the new mixture on the crust and let it cool for about four hours in the freezer—you can leave it overnight if you like.

Frosting:

  • Place the dulce-de-leche and milk in the microwave and heat them up until they’re lukewarm.
  • Stir them both and pour the mixture over the cake.
  • Set the cake in the freezer for about ten minutes to allow it to stabilize.
  • Once the ten minutes are up, remove the cake from the pan and decorate it with the shredded coconut.
