Pastry With Potato Filling
Ingredients
Dough:
- 2 cups all-purpose flour (optional: replace with spelt flour)
- ½ cup canola oil
- ½ cup boiling water
- 1 tsp. salt
Filling:
- 4 medium-sized potatoes (cooked and mashed)
- 1 onion (chopped)
- 2 tbsp. olive oil
- 1 tsp. salt
- A pinch of black pepper
- 1 egg (beaten)
- Sesame seed (to sprinkle on top)
Instructions
- Heat the oven up to 350°F (180°C).
- Mix the dough ingredients in a large bowl for about 3 minutes until everything is well-combined.
- Cut the dough into two equal halves.
- On your work surface, spread out each portion of the dough, and use a glass to cut out rounds.
- After that, place some oil in a deep pan and fry the chopped onion
- Add the mashed potatoes and season with salt and pepper as the onion starts changing color.
- Pick up a clean teaspoon and fill up the cut-out rounds by placing a scoop on the bottom half of the round and folding it in half.
- Make sure to tighten the ends. If you want to give it a nicer look as well as secure the edges, press down with a fork on the ends.
- Place the Burekitas neatly on a parchment paper-lined cookie sheet.
- Brush the Burekitas with the beaten eggs and sprinkle some sesame seeds.
- Place in a pre-oven at 350°F (180°C) and bake for 30-40 minutes until golden.
