How did you get the pancakes so beautifully thick? Did you use a certain pan or a ring?

No special equipment is needed. You just need to put the batter in a cup and pour it onto the frying pan half a cup at a time for perfectly round pancakes.


Can I use all-purpose flour?

Yes, you can. You just need to add 2 1/4 teaspoons (10g) of baking powder per each cup of flour used.


Why is the baking powder needed if there’s self-rising flour in the recipe?

To add more height and fluffiness to the pancakes.


Should it be fried on a low flame?

Yes, that’s correct.


Do the pancakes come out cooked all the way through?

Yes, only as long as you wait for the top size to rise and bubble up before flipping the pancake.

Ingredients

  • 4 eggs (separated)
  • ½ cup sugar
  • 1 cup milk (regular plastic disposable cup)
  • 3 cups self-rising flour
  • 2¼ teaspoons baking powder (10 g)
  • Vanilla extract

Instructions

  • Beat the egg whites with the sugar until pasty
  • Gradually add the yolks while still mixing
  • Mix in the milk and vanilla extract
  • Add the self-rising flour and baking powder and hand mix until combined
  • Heat the pan and fry the pancakes
