Ingredients
Fish:
- Trout fillets
- Coarse black pepper
- 1 tsp. oregano
- Kosher salt
- 1 lemon
- 2 tbsp. honey (or date syrup)
- 1 tbsp. teriyaki sauce
- Olive oil
Oven baked vegetables:
- 3 cups green beans (long or short)
- 10 whole cherry tomatoes
- 4 whole garlic cloves
- 2 large yams (cut)
- 3 carrots (cut into rounds)
- 2 bell peppers (cut into thick strips)
- Some oil
- Salt
- Coarse black pepper
- 1 tbsp. teriyaki sauce
- 1 tbsp. date syrup
Refreshing Salad:
- Cabbage (cut into thin strips)
- Carrot (cut into strips)
- Scallion (cut)
- Red craisins
- A handful of walnuts
- A handful of blanched almonds
- Cucumber (cut into thin strips)
Instructions
Fish:
- Give your fish time to defrost fully. Make sure to leave the skin on because it enhances the taste. However, clean the skin to remove the scales.
- Pour some oil into a pan and sear the fish fillets in it with the skin facing down. Sear for around 4 minutes until it’s slightly burned.
- Brush the side facing upward with some oil and sprinkle, coarse black pepper, oregano, and kosher salt on it. You should also drizzle some date syrup or honey and add a tablespoon of teriyaki sauce. Once you’ve done so, flip the fish fillet over.
- Continue searing for 2-3 minutes. You’ll know you’re done when the fish has a noticeable change in color.
Oven baked vegetables:
- In another pan, sear all the vegetable ingredients for a few minutes. You should add salt, coarse black pepper, a tablespoon of date syrup, and a tablespoon of teriyaki sauce to them too.
- Next, place the vegetables on a baking pan lined with parchment paper. Bake them for half an hour at 400℉ (200℃) until they get soft.
Refreshing salad:
- Place all the vegetables in a bowl.
- For an extra punch, add lemon seasoning, coarse black pepper, and a tablespoon of date syrup.
