Oven Roasted Whole Chicken and Potatoes
Ingredients
- 1 whole chicken
- 4½ lbs. small potatoes (2 kg)
- ½ cup water
- 6 grains whole allspice
- 2 bay leaves
- 5 tbsp. sweet chili sauce
- 3 tbsp. hot chili sauce
- 1 garlic head
- 1 tbsp. sweet paprika
- 1 garlic clove (minced)
- ¼ cup oil
- 1 tsp. coarse black pepper
- 2 tsp. kosher salt
- 1 tbsp. date syrup / honey
Instructions
- Place the whole chicken in your roasting pot.
- Season the chicken with coarse black pepper, date syrup, oil, sweet paprika, a minced garlic clove, sweet and hot chili sauce, and a ¼ teaspoon of kosher salt.
- Rub the seasoning well all over the chicken.
- Peel the potatoes and distribute them around the chicken in the pot.
- Go ahead and add the allspice, garlic head, bay leaves, and a teaspoon of kosher salt. Allow the chicken to marinate in the fridge for around 3 hours.
- Preheat your oven to 300℉ (150℃) and roast the chicken and potatoes in there for 5 to 6 hours. Make sure to baste them with the marinade every 40 minutes or so.
