Equipment

9” (22 cm) round baking pan or Bundt pan
8 fl. oz. (250 ml) paper cup

Ingredients

  • 2 cups self-rising flour (or all-purpose flour with 2¼ tsp. baking powder)
  • 1½ tbsp. vanilla sugar (20 g)
  • 1¾ cups sugar
  • 5 eggs (beaten)
  • ¾ cups oil
  • 1 cup orange juice or milk
  • Orange or lemon zest (from a half orange/lemon)
  • 3 tbsp. cocoa powder

Instructions

  • First, combine the flour, vanilla sugar, and sugar in a bowl.
  • Make a hole in the middle of the mixture and pour in the beaten eggs one by one.
  • Then add the oil, orange juice or milk, and orange/lemon zest.
  • Mix by hand.
  • Next, pour ¾ of the batter into an oiled 9” round pan or a Bundt pan (if you pour it into a bigger pan, the cake will come out lower).
  • Add cocoa powder to the batter that is left in the bowl, hand-mix well, and pour into the pan over the white batter.
  • Use a toothpick to create swirls in the batter.
  • Bake on the second lowest rack of the oven in a preheated oven at 350°F (175°C) for about 40 minutes, or until a toothpick poked into the center of the cake comes out dry.
  • Allow to cool on a rack for 10–15 minutes. Then flip it over and cut into slices.
