- 6 M eggs at room temperature (remove from fridge an hour before)
- 1½ cups sugar
- 1 cup oil
- A pinch of salt (neutralizes the egg odor)
- 1 cup freshly squeezed orange juice
- 1½ cups white spelt flour
- 1½ cups shredded coconut
- 2½ tbsp. baking powder (20 g)
- 1 orange (thinly sliced)
Instructions
- To start, beat the egg, salt, and sugar in a mixer bowl for about 3 minutes on high speed.
- After that, slowly add the oil and mix again for 2 more minutes.
- As the oil is mixed with the ingredients, add the orange juice and lower the speed to an acceptable level.
- Before the two minutes are up, add the flour, coconut, and baking powder and continue mixing for a few extra seconds—don’t overdo it, though, as the cake can come out dense and hard to eat.
- As your batter rests, place 4 thin slices of orange at the bottom of a baking pan.
- Once you’ve arranged the slices appropriately, pour the batter on top of them.
- Preheat the oven at 310°F (155°C).
- Bake for about 70 minutes, then remove the cake from the oven and allow it to cool.
