Do I have to separate the eggs first?
Some cake recipes call for separated egg whites to fluff up the batter, but not this one. You can use unseparated eggs, and you’ll still end up with great texture.

For best results, you’ll want to beat the eggs and sugar on high. Then, you can bring down the speed and add the rest of the ingredients.

Old Fashioned Orange Coconut Cake

Cake:
- 4 eggs
- 1 package vanilla instant pudding mix
- ½ cup shredded coconut
- 1½ cups self-rising flour
- 1 cup oil
- ¾ cup sugar
- 1 cup freshly squeezed orange juice
Glaze:
- ½ cup sugar
- ½ cup water
- 1 tsp. honey
Instructions
- Crack the eggs and beat them with the sugar.
- Add the remaining ingredients on the cake list and mix well.
- Pour the batter into the pan/s.
- Bake the cake at 340°F (170°C) for around 40 minutes.
- While the batter cooks, heat some water and sugar (half a cup of each) on the stovetop.
- Once the water starts boiling, lower the heat and add a teaspoon of honey.
- Mix the glaze well and pour it over the still-hot cake.
Tips
- The cake takes around 40 minutes to cook thoroughly. However, your oven might be running a tad bit too hot or too cold than ours.
- So, it’s safer to do the toothpick test. If it comes out with wet batter, you’ll need to let the cake bake longer.
