Equipment
Ingredients
- 3½ cups flour
- 2¼ tsp. baking powder (10 g)
- 1¾ sticks butter or margarine (200 g)
- ½ cup oil
- ½ cup water or juice
- ¼ cup sugar
- Date spread and chocolate spread – for filling
Instructions
- Preheat the oven to 350°F (180°C).
- Start by beating the butter and oil in a large bowl with a mixer until they’re light in color.
- Add the sugar to the mixture.
- Keep mixing until the sugar dissolves and disappears (scrape down the sides frequently).
- Pour the water or juice over the mixture and continue beating until everything is well incorporated.
- Sift the dry ingredients over the mixture after dividing them into two batches.
- Keep beating until the mixture starts to form a crumbly dough.
- Use your hand to bring the dough together and knead it.
- Cover the dough with a sheet of plastic wrap and place it in the fridge for at least one hour.
- Take the dough out of the fridge, and divide it into three even parts.
- Flour your working surface lightly.
- Roll out each part into a large rectangular sheet with a wooden rolling pin (about 1/8 inch thick).
- Spread your desired filling (date or chocolate) over the dough sheet.
- Roll up the dough into a tube (just as you would do with a cinnamon roll).
- Move the dough roll to a parchment paper-lined baking sheet.
- Score lines marking where individual pieces would be (preferably one inch apart).
- Repeat the process with the remaining dough.
- Bake for about 30 minutes until the dough turns golden.
- Take the date rolls out and let them cool completely.
- Break the cookies apart and serve.
