Equipment

8 oz. baking measuring cup (240 ml)

9” / 10” round baking pan (24cm / 26 cm)

Ingredients

Cake:

▢ 5 eggs (unseparated)
▢ ½ cup heavy cream / Rich’s whipped topping (for a non-dairy version)
▢ 1 cup oil
▢ 1 cup sugar
▢ 1 cup chocolate milk mix
▢ 1 heaping tbsp. cocoa powder
▢ 1 cup self-rising flour

Ganache:

▢ ½ cup heavy cream
▢ 3½ oz. dark chocolate (100 g)

Instructions

Cake:

Preheat the oven to 350°F (180°C).
In a large bowl and following the order of the list, beat all the ingredients by hand.
Beat until the batter is smooth and has no clumps (don’t overmix the batter; mix only until the ingredients are combined, this way the cake will come out beautifully even without cracks).
Oil the bottom and sides of a baking pan.
Pour the batter in.
Bake for 35 to 45 minutes, until a toothpick poked in the center of the cake comes out with moist crumbs on it.
Prepare the ganache before removing the cake from the oven.

Ganache:

In a medium pot or saucepan, heat the heavy cream up until right before boiling then remove it from the flame.
Add the dark chocolate.
Mix until smooth and glazy.
Pour the ganache onto the cake as soon as you remove it from the oven.
Allow to cool, and garnish if desired.
Store in the fridge while well-covered.
