Who doesn’t love oatmeal cookies? They’re delicious, healthy, and most importantly, easy to make!

If you’re in the mood for treating your family to a nice snack, try this oatmeal cookies quick oats recipe.

Yes, feel free to use the syrup of your choice.


Can I replace the coconut oil with something else?

Yes, you can replace it with 2–3 teaspoons of butter instead. Or, use some oat milk with raw tahini.

You can use honey instead; I personally do so.

Ingredients

In a large bowl:

  • 1 cup thick oats
  • 2 tbsp. sesame seeds
  • 2 tbsp. spelt flour
  • 1 tbsp. all-purpose flour
  • 2 tbsp. sugar (or honey)
  • 1 tsp. cinnamon

In a small bowl:

  • 1 egg
  • 2 tbsp. date syrup
  • 2 tbsp. raw tahini
  • ⅓ cup coconut oil

Instructions

  • In a large bowl, add all the dry ingredients listed above, and combine them well.
  • In a smaller bowl, add the wet ingredients and stir them using a spatula.
  • Make sure the ingredients in the small bowl are thoroughly mixed before adding the mixture to the large bowl.
  • Stir the mixture well, then start using it to form round balls.
  • After you’re done, flatten all the balls, so they’re in the shape of cookies, and place them on a cookie sheet.
  • If you want, you can add some toppings to your cookies, such as craisins, crushed walnuts, shredded coconut, or raisins.
  • Put the cookie sheet in a preheated oven at 340°F (170°C) for around 15 minutes, or until the cookies are puffy and golden.
  • Leave the cookies to cool for some time, then serve them and enjoy!
