It’s not every day that you find a healthy recipe for chocolate chip cookies! They’re everyone’s favorites, but they’re not exactly the healthy type.

Oatmeal Coconut Chocolate Chip Cookies

Ingredients

  • 1 cup shredded coconut (optional to replace with almond nibs or sesame seeds)
  • 1 cup quick oats
  • ½ cup of desired toppings (craisins, chocolate chips, etc.)
  • 1 cup whole spelt flour
  • ½ cup brown coconut sugar or brown cane sugar
  • 1 tbsp. fine cocoa powder
  • ½ tsp. baking powder
  • ½ tsp. baking soda
  • Wet Ingredients:
  • ½ cup delicate olive oil or melted coconut oil
  • ¼ cup pure maple syrup
  • ¼ cup almond butter or raw tahini
  • 1 egg

Instructions

  • Prepare all the dry ingredients and mix them in a large bowl.
  • When they’re thoroughly stirred, add the wet ingredients.
  • Wet your hands with some water, then start kneading the mixture.
  • Keep kneading until the mixture turns into a dough, and start forming cookies.
  • Prepare a cookie sheet and line it with parchment paper. Then, put the cookies on it, separating them to prevent them from sticking to each other.
  • Preheat the oven to 340°F (170°C), then put the cookie sheet inside.
  • Leave the cookies in the oven for 10–12 minutes, or until they’re golden.
  • Serve and enjoy!
