Nutritious Homemade Veggie Soup

Ingredients

  • 1 red / regular onion (chopped)
  • 3 garlic cloves (minced)
  • 3 tbsp. olive oil
  • 3 carrots (diced)
  • 2 celery stalks (chopped (including leaves))
  • 2 yams (diced)
  • 3 zucchinis (diced)
  • 1 butternut squash (diced)
  • 5 cups water
  • A handful of cilantro (chopped)
  • Spices to taste (coarse black pepper, soup mix, and turmeric)
  • Optional: chicken

Instructions

  • In a large pot, add the 3 tbsp of oil and fry the chopped onion with the minced garlic for about 30 seconds.
  • Once the 30 seconds are up, add the carrots and celery and stir for another minute.
  • Add the rest of your vegetables—except the cilantro— and mix everything together.
  • Slowly add each spice to the veggies while gently mixing.
  • Pour water into the pot until it covers the vegetables and bring it to a boil.
  • Cook the vegetables for about 15 minutes, and add the cilantro near the end.
  • Bring the heat down to medium to let the vegetables cook until they’re soft and the liquids thicken.
  • Serve and enjoy! If you want, you can enjoy it as it is or remove half the amount into a bowl and blend the rest using a stick blender. After that, mix both together!
  • If you enjoy a completely smooth soup, you can blend everything together with the stick blender.
