Not Your Average Recipe for Meatballs
Ingredients
Meatballs:
- ¼ tsp. Ras El Hanout (Middle Eastern spice)
- ⅓ tsp. turmeric
- 1 onion
- ½ cup parsley
- 2 tbsp. breadcrumbs
- 1 lb. ground beef
- 1 egg
- ¼ cup seltzer
- ¼ tsp. coarse black pepper
- ¼ tsp. salt
- ¼ tsp. cumin
- 2 tbsp. oil
Sauce:
- 4 garlic cloves
- 4 tbsp. oil
- 2 cups boiling water
- ½ cup parsley
- 1 tbsp. paprika
- ¼ tsp. turmeric
- ¼ tsp. nutmeg (grated)
- 1 tsp. soup mix
- 1 tsp. cumin
Instructions
Meatballs:
- Grind the beef with the parsley and onions
- Add the egg, oil, bread crumbs, and seltzer water
- Knead the ground beef well
- Throw in the turmeric, Ras El Hanout, cumin, salt, and coarse black pepper
- Keep kneading the mixture gently but quickly until combined
- Allow the meatball mixture to rest for at least ten minutes
- Form small (one-and-a-half-inch) balls of the ground beef mixture using wet or oiled hands (to keep the meat mixture from sticking to your hands)
Sauce:
- Add the oil to a pot over medium to high heat
- Fry the garlic cloves in the oil and stir them constantly
- Throw in the chopped parsley and stir
- Add the boiling water
- Season the water with paprika, turmeric, grated nutmeg, and cumin
- Add the soup mix and keep stirring the sauce
- Place the meatballs into the sauce and let boil (skipping the browning process and cooking the meatballs into the sauce directly keeps the meat super tender)
- Lower the flame and continue cooking the sauce until the liquids reduce (leave some of the sauce)
- Serve next to white rice, buttered spaghetti, mashed potatoes, or inside a baguette with fresh mozzarella and basil
