Do you want to make a batch of fluffy muffins but don’t have any flour on hand? In that case, this quick recipe for oatmeal carrot muffins is just what the doctor ordered.
In less than half an hour, you can have a fresh batch of these nutritious and mouth-watering pieces of fluffy goodness ready for you and your loved ones to enjoy.

No Flour Oatmeal Muffins
Store these in the fridge and heat them up in a the morning for a quick light breakfast

Ingredients
- 3 carrots (grated)
- 1 apple (grated)
- 1 tsp. orange zest
- 2 tbsp. stevia sweetener
- 4 tbsp. applesauce (with no sugar added)
- 2 eggs
- ¼ cup oil
- 1½ cups gluten-free oats
- 2¼ tsp. baking powder (10 g)
- 1 handful craisins/raisins (with no sugar added)
- 1 tbsp. cinnamon
- 1 tsp. baking soda
- A pinch of ground cloves
- Natural maple syrup (for glaze)
Instructions
- Grab a bowl and place all the ingredients in it. Mix them well until they’re fully combined.
- Pour the mix into an oiled muffin tin. Alternatively, you can use paper baking liners. Also, consider topping the mix with broken walnuts.
- Preheat your oven to 350℉ (180℃) for around four minutes. Keep baking until the muffins are golden and stable.
- Next, take the muffins out of the oven and drizzle maple syrup over them.
