Equipment
Large loaf pan
Ingredients
- 9 oz. vanilla tea biscuits (250 g)
- 9 oz. chocolate tea biscuits (250 g)
- 1 cup heavy cream (250 ml)
- 1 package vanilla instant pudding mix (80 g)
- 1 package chocolate instant pudding mix (80 g)
- 1½ cups milk
Ganache:
- 2 chocolate bars (200 g)
- 1 cup heavy cream (250 ml)
Instructions
- In a large bowl, add ½ a cup of heavy cream, ¾ cup of milk, and vanilla instant pudding mix. Whip the mixture and put it aside.
- In a separate bowl, add the other half of the heavy cream, ¾ cup of milk, and the chocolate instant pudding mix. Whip it as well and set it aside.
- In a cup, mix some milk with a teaspoon of instant coffee. Then, wet the tea biscuits inside the liquid.
- Grab a loaf baking pan and line it with plastic film, so the cake will stabilize when you assemble it.
- Lay the vanilla tea biscuits on the bottom of the pan in neat lines, then cover them with a thin layer of vanilla cream.
- Add another layer of chocolate tea biscuits, then cover it with chocolate cream.
- Repeat with new layers if you want to create a thick cake.
- Wrap the pan in plastic film and put it in the freezer for three hours.
Ganache:
- Put the heavy cream and chocolate in a small bowl, then put it in the microwave until the chocolate melts. A minute and a half should be enough.
- Stir the mixture well to combine the chocolate with the heavy cream, then spread the ganache over the cake.
- It’s better to do so after you release the cake from the pan to avoid making a mess.
