Those of you who have a sweet tooth know how difficult it can be to find a quality cake. Further, when you do find such cakes, you’ll either have to pay good money to buy them or go through sophisticated recipes to make them where anything can go wrong.

Today is the day when this changes. Once you taste this moist date and walnut cake, it’ll become more of a necessity and less of a luxury.

Equipment

8 oz. paper cup (240 ml)
2 large loaf pans or 3 small ones

Ingredients

  • 3 large eggs
  • 1 cup sugar
  • 1 cup oil
  • 2½ tsp. vanilla sugar (10 g)
  • ¾ jar date spread (about 300 g)
  • 2¼ tsp. baking powder (10 g)
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 2½ cups flour
  • 1¼ cups boiling water
  • Walnuts

Instructions

  • Using your hands, mix the eggs, oil, sugar, date spread, and vanilla sugar.
  • Once the mix is homogenous, add the baking soda, baking powder, flour, and cinnamon, and mix well.
  • Boil a cup’s worth of water, and then put a tea bag inside for around 30 seconds. Once you remove the teabag, pour the water into the cake batter and keep mixing till you get a homogenous mixture.
  • You may add another ¼ cup of boiling water into the mix for better consistency.
  • Add a thin oily layer to your baking pan and pour in the batter.
  • Preheat your oven to 340°F or 170°C and bake for 5 minutes.
  • Once the 5 minutes are over, take out the cake and top it with your walnuts, then return it to the oven for an extra 35 minutes.
  • Your delicious cake is now ready to serve. To store it, an airtight container is highly recommended to keep in the flavor.
