Ingredients
- 5-6 red beets
- ½ tsp. cumin
- ¼ tsp. black pepper
- Salt (to taste)
- 1 lemon (squeezed)
- 2-3 tbsp. olive oil
- 1 handful of parsley (finely chopped)
Instructions
- Before you start cooking, wash the beets thoroughly, then strain them.
- Cook the beets as they are without any peeling until they turn soft—for about two hours.
- Remove the beets from the pot and let it cool for a couple of minutes before moving it to the fridge for a few hours.
- Once time is up, take out the beet and leave it for about 10 minutes to thaw a bit. After that, peel each piece.
- Mix the cumin, salt, black pepper, lemon juice, and oil in a bowl, then pour it over the beets and combine well.
- Pro tip: leave it in the fridge for a couple of hours after you’re done; it’ll taste even better!
