Yet, we keep going back to the classic ground beef taco filling. It’s the kind of dish that you can serve on most occasions, and it’ll still fit right in.
The key is to balance the textures and season the fillings well.

Will I be making tortillas from scratch?
Nope. When we say preparing the tortillas, we actually mean cutting them to size and crisping them up in the oven.
You don’t have to make the dough yourself since the store-bought variety will do just fine for this recipe.

Mexican Ground Beef Taco Recipe
Ingredients
- 5 tortillas
Salsa:
- 2 tomatoes
- 3 garlic cloves
- A handful of cilantro
- ¼ hot pepper (chopped)
- 3 tbsp. olive oil
- 2 tbsp. lemon juice
- Salt and pepper
Ground Beef:
- 1 lbs. chuck roast (ground (500 g))
- 2 small onions (chopped)
- 4 garlic cloves (minced)
- Salt and pepper
- 1 tsp. oregano
- Aioli Garlic-Lemon Mustard:
- 1 heaping tbsp. mayonnaise
- 1 tsp. mustard
- 1 tbsp. lemon juice
- 2 garlic cloves (minced)
- ½ tsp. sugar
- Salt and pepper
- 1 tsp. oil
- 1 tbsp. water
Instructions
Tortillas:
- Cut each tortilla into smaller rounds. Aim for a diameter of 5” (around 12 cm).
- Dip a pastry brush in half a cup of oil seasoned with a tablespoon of paprika.
- Brush the tortilla rounds on both sides.
- Preheat the oven to 340°F (170°C) and arrange the rounds on the rack.
- Pop the oven door open every now and then to release the air.
- While the door is open, remember to turn the rack to get an even bake all over.
- Once the tortilla rounds are all crispy and golden, take them out and set them aside for now.
Salsa:
- Chop and mix all the ingredients on the salsa list in a bowl.
- Let the bowl sit in the fridge for a while as you prepare the beef.
Ground Beef:
- Start frying the onions.
- When they’re translucent, add the garlic to the frying pan.
- Add the ground beef and the spice blend right away.
- Keep cooking until the meat turns grayish and the liquids are reduced.
- Taste to check that the beef is done cooking and adjust the beef’s seasoning if needed.
Aioli Garlic-Lemon Mustard:
- Mix all the ingredients on the aioli mustard list.
- Take a final taste to make sure the dressing is well-seasoned.
Assembling the Tacos:
- Start by adding a layer of beef to the tortilla.
- Top it with strained salsa.
- Drizzle aioli dressing to your liking.
Tips
- To cut the tortillas, you can use a large cookie cutter.
- Don’t forget to open up the oven a few times to keep the tortilla from puffing up.
- If you want to add a flavor kick, pick up some guacamole and spread a bit in your tacos.
