What can I use instead of condensed milk?
We recommend trying your best to use condensed milk as it’s necessary for this recipe.

Can I use Oreo cookies instead of Lotus cookies?
Yes, you can definitely use Oreos instead, and it comes out fantastic. We made this ice cream recipe with both Oreo cookies and pecan nuts.
For the same amount of batter, it’s enough to add 4 crushed Oreo cookies.
How do you set the cookies? Do you place a layer of cookies, then a layer of cream in the middle, then another layer of cookies, and then transfer it to the freezer?
You mix the crushed cookies into the cream batter. After it freezes, you cut a piece and place one whole cookie on top and one whole cookie at the bottom to make an ice cream sandwich.

- 2 cups heavy cream (500 ml)
- 1 can condensed milk (400 g)
- 2 tbsp. vanilla instant pudding mix
- 4 Lotus cookies
Instructions
- In a food processor or a large bowl, whip the heavy cream with the condensed milk and the vanilla instant pudding mix.
- Roughly crush 4 Lotus cookies into uneven bits.
- After whipping the cream, add the crushed Lotus cookie bits to the whipped cream.
- Fold lightly until combined (no need for thorough mixing).
- Transfer the ice cream batter to 2 loaf pans.
- Place the pans in the freezer and let them sit overnight.
- When it’s time to serve, cut the ice cream into rectangles about the size of a Lotus cookie and then place a Lotus cookie on both sides to form an ice cream sandwich.
