Can I reduce the amount of sugar used for this recipe?
Yes! If you don’t want your cheesecake to come out too sweet, use ½ cup only instead of one full cup.
This could also be a good idea if you plan on pairing the cheesecake with sweet toppings like chocolate shavings or blueberry sauces.
Shouldn’t I dissolve the gelatin in water first?
No, we’d recommend mixing it with milk only. Using water for the cheese filling doesn’t sound too appealing!

Can I make this cake without gelatin?

Easiest Lotus Cheesecake Recipe
Ingredients
- Lotus cookies (+ cookie crumbs)
Cream:
- 1½ lbs. quark creamy soft cheese 9% (750 g)
- 1 cup heavy cream (250 ml)
- 1 cup sugar
- 1 package vanilla instant pudding mix (80 g)
- ½ cup milk
- 1 package gelatin powder (together with the ½ cup of milk)
Instructions
- In a mixer, whip all the ingredients on the cream list for 5 minutes.
- Grab a baking pan and line the bottom with the Lotus cookies.
- Pour the cream mix over the Lotus cookies.
- Sprinkle some cookie crumbles on the top. (Optional)
- Pop the cheesecake pan in the fridge and let it chill overnight.
