Fritters are great for munching any time of the day. Made with leeks, you get the benefits of an additional veggie ingredient wrapped in potatoey goodness!
This leek fritters recipe is crunchy on the outside, creamy on the inside, and delicious all the way around!

Leek Fritters Recipe
Boy oh boy! get some fresh bread and make a sandwich out of these fritters!

Ingredients
- 3 potatoes
- 2 large yams
- 1 leek (the white part, rinsed and clean)
- 2 tbsp. olive oil
- 2 eggs (alternatively – replace with raw tahini or almond butter because their flavor is more neutral)
- ½ cup red lentil flour
- ½ cup quinoa flour
- Salt
- Nutmeg
- Ground cilantro seeds
Instructions
- Preheat the oven to 350°F (180°C)
- In a large pot, boil the potatoes and yams whole.
- Allow the potatoes and yams to cool then mash them together.
- Chop the leek into rings and steam them in a covered pot with a tablespoon of olive oil until soft; for 6 to 7 minutes.
- In a bowl, mix the mashed potatoes and yams, steamed leek, lentil flour, quinoa flour, eggs, oil, and spices.
- Oil your hands and form flat patties.
- Place the patties in a baking pan lined with olive-oiled parchment paper.
- Bake for about 20 minutes.
- Flip the patties over and bake for extra 5 minutes.
Tips
- Almond butter is like raw tahini but made out of almonds only.
- You can add ½ lbs. ground turkey (250 g) to the mixture, but you’ll also have to add some more flour.
- You can play around with the amounts; more leek and less potatoes, etc. But you should also adjust the amount of flour added accordingly.
